For reliable results we recommend this recipe from the Hairy Biker's family cookbook "Mum knows best!". Andrew loves a good, big scone with loads of jam and maybe a little bit of clotted cream and he also loves to bake. When he discovered that he is quite good at baking, he caught the bug and regularly knocks up a batch of scones. He has to fight for them though as our son loves them just as much as him!
The book was published in 2010 and brought together a collection of tried and tested recipes lots of family favourites and also some from Women's Institute. This recipe can be found on page 49, 'A New Look at Scones'
Ingredients
340g self-raising flour
pinch of salt
85g of butter, plus extra for greasing
55g caster sugar
125ml milk
4 tbsp natural yogurt
Method
Preheat the oven to 220°C/Gas 7 and lightly grease a baking sheet. Sift together the flour and salt in a bowl and rub in the butter until the mixture resembles fine bread crumbs. Stir in the sugar and add the milk and yogurt. Work the mixture together until a soft dough is formed.
Turn the dough out onto a floured surface and knead lightly, then flatten it out to an even thickness of about 2cm. Using a 5cm cutter, cut out the scones and place them on the baking tray. Gather the trimmings and cut out more scones.
Bake for 12-15 minutes until brown. Remove the scones from the oven and leave then to cool on a wire rack.
Andrew likes to glaze the scones with some extra milk before placing in the oven. He rolls his dough to about an inch, uses a larger cutter, 3 inch (8cm) and bakes for slightly longer, 20-25 mins.
